Foxtail Millet and Sago Dosa



Foxtail millet and sago dosa is a light, crispy, and nourishing variation of the traditional dosa, made by fermenting a batter of foxtail millet and sago, often blended with a small portion of urad dal for softness. This dosa is gentle on the stomach yet satisfying, making it suitable for all age groups.

Foxtail millet is rich in dietary fiber, protein, and essential minerals like iron and magnesium, and its low glycemic index helps regulate blood sugar levels while providing long-lasting energy.

Ingredients

  1. 1 cup Foxtail Millet
  2. 1/2 cup Sago
  3. 1/4 cup yogurt
  4. green chillies
  5. 1 " ginger
  6. 1 teaspoon cumin seeds
  7. Salt to taste
  8. Oil as needed to fry
  9. Orange (optional)

Instructions

Step 1

Wash and soak Sago and Foxtail millet separately overnight.

Step 2

Drain and blend to smooth paste by adding curd/water, cumin, green chillies or ginger. Add salt as required.

Heat a tawa. Drizzle oil, sprinkle water to sizzle off, wipe dry with a tissue paper to ensure non stick coating. Pour a ladleful of batter and spread in circular with the back of the ladle.

Step 4

Drizzle oil around the edges and over it. Fry on low flame till one side turns light brown. Serve hot with any chutney of your choice.
