Foxtail carrot millet idli is a soft, fluffy, and nutritious steamed dish made from a fermented batter of foxtail millet and lentils, enriched with finely grated carrots that add natural sweetness, color, and extra nutrients. This healthy idli is a wholesome alternative to traditional rice idli, offering a mild, slightly nutty flavor along with a pleasing texture.

Ingredients

  1. 1 cup foxtail millet
  2. 1/2 cup split white urad dal
  3. 1/4 cup poha
  4. 1 tsp methi seeds (Fenugreek seeds)
  5. as per taste Salt

Instructions

Step 1

Wash and soak the millets in water in a separate bowl and udad dal, mehi seeds along with poha with water in another bowl at least 4-5 hrs.

Drain the excess water soaked millet and udad dal. Blend the urad dal with little water to make a thick and smooth batter. Transfer the batter to a large bowl. Next blend the foxtail millet with little water to make a smooth batter. Add this to the urad dal batter. Add salt to taste and stir well to combine.

Ferment the batter for overnight. Once the batter is fermented, gently stir it.

Blend the grated carrot with little water and make a smooth paste. Now add the carrot batter with millet dal batter and mix it well.

Grease the each cavity of idli mould with oil and spoon the idli batter into the each cavity. Prepare the idli steamer with little water in bottom.

Place the filled idli racks in the steamer. Place the steamer on medium to high flame and steam the idli for 10 minutes. After 10 minutes turn off the flame. Open the lid and keep it for 5 minutes.

Remove the idli with the help of a spoon and serve it hot with coriander coconut chutney and tomato onion coconut chutney.
