Foxtail millet vegetable uttapam is a thick, soft, and flavorful savory pancake made from a fermented batter of foxtail millet and lentils, topped generously with finely chopped vegetables such as onions, tomatoes, carrots, capsicum, and green chilies.

Ingredients

  1. 3 cups foxtail millet
  2. 1 cup urad dal
  3. 1/2 tsp fenugreek seed
  4. 2 tsp pauva
  5. Salt
  6. watar
  7. Butter
  8. As required chopped vegetables
  9. leaves Coriander
  10. As required chopped onion
  11. As required chopped tomatoes
  12. Green chilli
  13. Pinch baking soda

Instructions

Step 1

Wash foxtail millet three to four times and soak it. Wash and soak urad dal and methi seeds for over night. Soak poha while grinding and grind to smooth paste with little water if needed ferment over night.

Next day add salt and as required water. Finally add pinch of baking soda.

Heat a non-stick pan or a griddle. Grease it well with oil on low flame. Add a ladleful or more of the batter depending on the size required. Top it with the vegetables and chilli and Coriander leaves. Press them down a bit. Once the bubbles begin to appear flip the uttapam over cook until done.
