Foxtail millet murukku is a crunchy, savory snack made by blending finely milled foxtail millet flour with spices, herbs, and a touch of oil, then shaped and fried or baked to perfection, offering a healthier twist to the traditional murukku.

Ingredients

  1. 1 cup foxtail millet
  2. 2 table spoon urad dal powder
  3. 1 teaspoon Ajwain
  4. 1/2 teaspoon asfetida
  5. 2 table spoon hot oil
  6. 1 teaspoon salt
  7. 500 ml oil for deep fry

Instructions

Step 1

Take a bowl of foxtail millet, clean with plain water, twice and drain the water completely. Take a muslin cloth and pour it, spread and dry under the fan.

Meanwhile keep a kadai on medium heat, add urad dal saute till the aroma appears, remove from heat,let it cool. Transfer to a mixer jar, grind it into a fine powder.

In a big bowl,add foxtail millet flour,urad dal powder, ajwain, asfetida powder mix with one table spoon of water, salt and hot oil. Sprinkle little water, mix well,make a nice and soft dough. Take a muruku maker, apply oil and stuff the dough. Keep aside.

Keep a kadai on medium heat,add oil, let it hot, take the muruku maker, press the muruku. Let it cook for five minutes, give it a mix twice. Muruku turns golden brown, remove from the oil. Transfer to a serving bowl.
