Foxtail, barnyard, kodo, and little millets upma is a hearty and flavorful breakfast or meal prepared by cooking a blend of these nutritious millets with onions, vegetables, curry leaves, green chilies, and mild spices, creating a comforting dish with a pleasant, slightly nutty taste. This multi-millet upma is a wholesome alternative to semolina-based upma, offering superior nutrition and sustained energy.

Foxtail millet is rich in fiber and protein and helps regulate blood sugar levels; barnyard millet is easily digestible, low in calories, and beneficial for weight management; kodo millet supports digestion, is high in antioxidants, and helps control cholesterol; and little millet is rich in iron and B-complex vitamins that support metabolism and energy levels.

Ingredients

  1. 1 cup mix millets(foxtailBarnyard,kodo, little millets)
  2. 1/4 cup carrots chopped
  3. 1/4 cup chopped beans
  4. 1/4 cup peas
  5. 1/4 cup cauliflower florets
  6. 2spoon peanuts
  7. curry leaves
  8. 2spoon capsicum chopped
  9. green chillies
  10. 2 spoon oil
  11. 1spoon mustard seeds
  12. 1spoon chana dal
  13. 1spoon urad dal
  14. 2 spoon curd
  15. to taste Salt
  16. 2spoon coconut grated
  17. 2spoon coriander leaves

Instructions

Step 1

Wash and soak millets for 20min. Heat oil add mustard seeds, chanadal, uraddal, curry leaves saute it,then add chopped veggies, peanuts and cook for a while.

Step 2

Add 2,1/2cups water and curd let it boil add millets stir it cover with lid and cook till soft.

Step 3

Add grated coconut, coriander leaves and serve.
