Pearl Millet Soft Vada


Pearl millet soft vada is a nutritious and flavorful snack made by soaking and grinding pearl millet (kambu) along with lentils and mild spices, then frying or shallow-cooking to achieve a crisp outer layer and a soft, fluffy interior. This healthy variation of the traditional vada has a pleasant earthy taste and pairs well with coconut chutney or sambar.

Ingredients

  1. 1 cup pearl millet flour
  2. 1/4 cup Urad dal
  3. green chillies
  4. small piece ginger
  5. 1 teaspoon salt
  6. leaves Curry
  7. Oil for fry

Instructions

Collect pearl millet flour and whole white urad. Keep aside.

Keep a fry pan on medium heat, and add urad dal,fry till the aroma comes out. Remove and let it cool. Transfer to a mixer jar, grind it into a fine powder.

Take another mixer jar add green chillies, ginger, curry leaves, cumin seeds and salt, add table spoon water. Grind it into a fine paste. Add pearl millet flour,urad dal powder,and green chillies paste. Sprinkle some water, mix well to combine together. Vada batter is ready now.

Keep a kadai,add oil. Keep it medium heat. Drop the batter with the centre hole. Fry both sides turn golden brown. Remove and put it in the kitchen tissue.

Transfer to a serving plate. Serve hot with coconut chutney, tomato chutney or tomato ketchup.
