Valentine’s Day Special Beetroot and Ragi Mini Idlis are a nourishing millet-based version of classic South Indian idlis, prepared using ragi and nutrient-rich ingredients. Light, satisfying, and rich in natural fiber, these mini idlis deliver authentic flavor while supporting a balanced lifestyle. Ragi is naturally rich in calcium and essential nutrients, supports digestive health, helps maintain healthy blood sugar levels, and promotes overall wellness.

Ingredients

  1. 1/2 cup Ragi flour Dark Chocolate Ragi Brownie
  2. 1 cup Semolina Rava Appe
  3. 1/2 cup Curd
  4. Grated beetroot 1medium
  5. Salt to taste
  6. 2 Chopped green chillies
  7. 1 tsp Chopped ginger
  8. 2 tablespoons Grated fresh coconut
  9. 1 tsp Cumin powder
  10. 1/2 tsp Baking soda
  11. 1 tsp sugar
  12. 2 tsp lemon juice
  13. as needed Water
  14. Chutney to serve
  15. Pickle or yoghurt to serve
  16. 1 tsp Chilli powder

Instructions

Step 1

First grind together semolina and ragi flour to a fine powder. Then grind together coconut, beetroot, all the spice powders, curd and salt to a smooth paste.

Now combine the paste with the powder of ragi and semolina and make a thick batter of pourable consistency adding water in small batches. Lastly, add the baking soda, and 1/2 tsp sugar and 2 tsp lemon juice. Mix well. Add extra spices if you feel the mixture is still bland.

Then grease the small / mini idli stand with ghee. Boil 2 cups of water in a pressure cooker or idli steamer.

Fill the idli molds with prepared batter and immediately place for steaming in the pressure cooker or steamer. Steam without whistle for 10 to 12 mins.

Step 5

Open the lid 2 to 3 minutes after switching off the flame. Then remove the stand, drain off any water accumulated on the sides. Remove the idlis carefully, store in a hot box lined with a kitchen towel.

Serve delicious and healthy Beet and Ragi Mini idlis with your choice of chutney, curd, pickle. Garnish with rose petals. Enjoy Valentine's Day!🌹
