Assemble ingredients, chop Almonds and crush Cardamom.

Fry cashews till golden brown and keep aside.

In moderately heated pan add 2 tbsp ghee, add flattened rice and fry for 2-3 minutes till slight golden brown.

In pan add 1 tsp melted ghee, then add already boiled milk, add milk powder and mix very nicely.

Now switch on flame and simmer milk for 2-3 minutes. Add cardamom and simmer for 2-3 minutes.

Now add poha / flakes and mix well. Cook for 6 - 7 minutes under medium flame, we need to cook flakes .

Now add sugar + dry fruits and cook for 3-4 minutes under medium flame.

Simmer for 2 minutes under low flame. Consistency should be on the thinner side as after cooling flakes will soak milk and turn thick.

Now foxtail Poha Kheer / payasam is ready.

Serve after 1 - 2 hour, garnish with cashews or any dry fruits. Either serve chilled or at room temperature.
