Foxtail millet sweet puri is a soft yet slightly crisp traditional delicacy prepared using foxtail millet flour and stuffed or coated with natural sweeteners like jaggery, along with ingredients such as coconut and cardamom, giving it a rich aroma and comforting taste.

This sweet puri is a healthier alternative to refined flour–based festive snacks while still being indulgent and satisfying. Foxtail millet is rich in dietary fiber, plant-based protein, and essential minerals such as iron and magnesium, and its low glycemic index helps regulate blood sugar levels and provide sustained energy.

Ingredients

  1. 250 gm - foxtail millet
  2. 125 gm - jaggery
  3. 3 tsp - water
  4. 250 gm - maida
  5. 2 tbsp - semolina or sooji
  6. 1 tbsp_ oil (to knead)
  7. 250 gm - oil (to fry)

Instructions

Step 1

Dough for the outer covering. Make a dough with sooji & maida by adding heated 1 tbsp oil and little water. Knead it well, cover it with wet cloth. Keep it for one hour. For filling Melt jaggery with 3 tsp water on a low flame. Add foxtail millet powder to it. Stir well & switch of the gas stove. Allow it to cool. (Making of foxtail millet powder) wash it properly.

Dry it to sunlight & make powder in mixer. Make balls from jaggery and foxtail mixture. This is used as filling. Make one ball from dough, flatten it & fill the jaggery and foxtail mixture ball. Cover it, make flat, make puri, apply little oil, tap by hand or make puri with the help of rolling pin. Heat oil on a low flame. Fry sweet puris. After cool serve it. This is traditional North Karnataka sweet. You can store it for two weeks.
