Ingredients

For Green Paste:

  1. 100 gms spinach
  2. 50 gms coriander
  3. 4-5 green chillies
  4. 1 tbsp chopped garlic
  5. 1/4 tsp salt
  6. 1/2 lemon
  7. For Green Rice:
  8. 1 1/2 cups Basmati rice
  9. 2 onions
  10. 1 carrot
  11. 1 potato
  12. 1/2 capsicum
  13. 1/2 cup Green peas
  14. 1 tomato
  15. 1 tsp salt
  16. 1/2 lemon
  17. 3 tbsp olive oil

For Masala Mix:

  1. 1/2 tsp oregano
  2. 1/2 tsp mixed herbs
  3. 1/2 tsp pizza seasoning
  4. 1/2 tsp chilli flakes
  5. 1/4 tsp salt

For Vegetables and Paneer & RAGI SAUCE:

  1. 150 gms paneer
  2. 1/4 cup boiled corn
  3. 1 onion
  4. 1/2 capsicum
  5. 1/2 tsp finely chopped ginger-garlic
  6. 3 tbsp olive oil
  7. 2 tsp butter
  8. 2 tbsp RAGI FLOUR
  9. 2 cups milk
  10. 1 tbsp Kashmiri chilli powder
  11. 2 cheese slices
  12. For Garnish:
  13. 1 cheese cube

Instructions

Step 1

For Green Paste: Wash, clean and chop spinach, coriander and Green chillies. Finely chop ginger and garlic. Blanch and refresh the chopped spinach.

Crush palak, coriander, ggg with salt and lemon to a fine Green paste.

For Green Rice: Cook the Rice with salt, lemon and 1tsp olive oil and cool it completely. Meanwhile, chop the onions, carrot and potato. In 2 tbsp olive oil, add in sliced onions, carrot, potato and peas. Cook for a while. Meanwhile, mix the masalas for the Masala Mix.

When vegetables are done add in tomato and capsicum. Mix and after 1 minute add in the Green paste.

Mix. After 2 minutes add in the cooked rice. Mix gently. Switch off gas.

For Sauted Paneer &Vegetables: Cut paneer into cubes and mix in some salt and 1/2 tsp masala mix. Rest it for 10 minutes. Meanwhile, chop onions into petals, dice the capsicum and boil the corn. In 1 tsp olive oil add in the rested paneer and saute it for 2 minutes. Transfer to a plate. In the same oil add in chopped garlic and 1/2 tsp masala mix.

Add in petal- cut onions, corn and mix. Switch off and add in 1/2 diced capsicum.

Mix and transfer to a plate. Lastly, ready the ingredients for the Hero RAGI SAUCE.

In olive oil and butter, add in 2tsp ragi flour. Mix and stirring continuously, cook the ragi flour until aromatic.
Add in milk in batches and stirring continuously mix to form a lumpfree sauce. Bring to a boil and add in the cheese slices. Add in salt as needed and Kashmiri chilli powder and mix well.

Mix well. Colour of the sauce will change because of the Kashmiri chilli powder. Lastly, mix in the sauted paneer and vegetables. Now your CREAMY RAGI FLOUR SAUCE IS READY. Garnish the Green Rice with grated cheese. Garnish the Sauce by sprinkling some Masala mix.
