Jowar Pulao is a nourishing millet-based alternative to classic rice pulao, prepared using jowar and mixed vegetables. Light, satisfying, and rich in natural fiber, this dish combines authentic flavors with balanced nutrition. Ingredients

  1. 1 cup jowar pearl
  2. 1 bowl mixed veggies.. peas, carrot, capsicum, Potato
  3. 1 onion
  4. 1 Tomato
  5. 3 clove chopped garlic
  6. 1 inch chopped ginger
  7. 3 chopped green chillies

Spices

  1. 1 tsp salt
  2. 1 tsp chilli powder
  3. 1 tsp coriander powder
  4. 1/2 tsp pulav masala
  5. 1/2 tsp turmeric powder
  6. 1 tsp lemon juice
  7. 3 tbsp fresh coriander

For Tempering

  1. 1 tbsp ghee
  2. 1 tsp oil
  3. 1 tsp cumin and mustard seeds
  4. 2 tsp Asafoetida
  5. 1 cinnemon stick
  6. 2 cloves
  7. 5 peppercorn
  8. 1 bay leaf
  9. 1 Star anise
  10. 2 glasses water to steam jowar
  11. 1 bowl masala curd

Instructions

Step 1

Wash and soak the jowar in warm water for the overnight next day add water and jowar in the pressure cooker and cook for 6 whistles or till Jowar steam cook soft. Chop the veggies and chilli garlic and ginger.

Now add Ghee and oil in a nonstick pan add tempering ingredients for crackle. Then add chopped chilli, garlic and ginger along with onion. Saute well. After that add peas, carrot and potato along with salt. Add 1/2 cup of water and cover the pan to cook veggies.

Step 3

Now add chilli, turmeric and coriander powder and pulav masala. Later add tomato, capsicum, boiled jowar, fresh coriander and lemon juice. Mix everything well and let it cook for 2-3 minutes then Switch off the gas.

Step 4

Serving time.. transfer the jowar pulav in a dish and serve with masala curd. Yummy and unique jowar pulav is ready to eat.
