Ragi Masala Dosa is a healthy recipe prepared with ragi flour, rice, urad dal, boiled potatoes, onions, spices, curry leaves, and other wholesome ingredients. Ingredients

For Ragi dosa

  • 1 cup Ragi flour 
  • 1/2 cup Rice flour 
  • 2 tbsp Besan 
  • 1 cup Buttermilk 
  • to taste Salt
  • 1/4 tsp Cumin seeds
  • 2 Chopped green chilli
  • 1 medium size Chopped onion
  • 1 tbsp Coriander leaves
  • 4 tbsp Oil 

For stuffing

  • 4 big Boiled potatoes
  • 1 tsp Soak chana dal/gram lentil
  • 1 pinch Mustard seeds 
  • 1 pinch Cumin / jeera seeds
  • 1 tsp Red chilli powder 
  • 1/2 tsp Turmeric powder 
  • 1 Chopped onion
  • 1 tsp Ginger,garlic paste
  • 2 Chopped green chilli
  • 1 tsp Chopped coriander leaves
  • 6 - 7 Curry leaves
  • 2 tbsp Oil 
  • to taste Salt
  • Sambar
  • 1 cup Tuvar dal 
  • 1/2 tsp Turmeric powder 
  • 1/2 tsp Red chilli powder 
  • 1 cup Chopped veggie (Brinjal,tomatoes, onion,)
  • 1 tsp Imli pulp 
  • 3 cup Water
  • Salt - to taste
  • 2 tbsp Sambar powder 
  • For the tempering
  • 1 tbsp Coconut oil 
  • 2 Dry red chillies 
  • 1 tsp Mustard seeds 
  • 1 pinch Hing 
  • Curry leaves - 8 - 10
  • 8 - 10 Urad dal 

Instructions

Step 1

For ragi dosa
Take a bowl combine besan, ragi flour, rice flour,salt and buttermilk
Make a smooth batter.
Batter is not so thick add onion,green chilli,cumin seeds and coriander leaves and mix it well. heat non-stick pan to very hot.
sprinkle some oil till it sizzles and quickly pour a large spoon of batter on it and cover it.

Step 2

Flip when done on one side.
heat oil in a wok.
add mustard seeds and cumin seeds to crackle.
add onion and saute for one to two mins.
add soaked chana dal /gram lentil,curry leaves.
add turmeric powder,red chilli powder,ginger garlic paste and 2 tbsp water and mix well.
add potatoes and salt and cook for 2 mins. garnish with coriander leaves.
now stuffing is ready.

Step 3

Add potato masala of the dosa. wrap it.
serve them hot with chutney and sambar.
enjoy ragi flour dosa with sambar.

Step 4

For sambar
heat oil add the chopped veggies and saute for 5 - 6 mins.
pressure cook dal and all the shallow fry veggies,turmeric powder and salt with three cup of water. after one whistle simmer the gas for ten minutes.

Step 5

After some time we open the cooker lid.
now we add sambar powder, red chilli powder and imli pulp and mix well.. to temper it with all spices and mix well in the sambar. garnish with coriander leaves and serve with dosa.
