Ragi Multigrain Cookies are a nourishing baked snack prepared using a blend of millet flours, jaggery, and natural ingredients. Light, satisfying, and rich in natural fiber, these cookies combine taste with balanced nutrition for a guilt-free treat. Ragi and mixed millets are naturally rich in essential nutrients, support digestive health, provide sustained energy, and promote overall wellness.

Ingredients

  1. 1/2 cup Ragi or Nachni or finger millet flour Mixed Millets and Veggies Dosa (with jowar, ragi, bajra flours and lentils)
  2. 1/2 cup whole wheat flour Ragi, Dates and Wheat Burfi
  3. 1/4 cup jowar flour
  4. 1/4 cup Bajra flour
  5. 3/4 cup jaggery powder
  6. 1 tablespoon thick yoghurt
  7. 1/2 cup + 1 tablespoon ghee
  8. 1/2 teaspoonful baking powder
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon vanilla essence or cardamom powder
  11. 1/2 cup+ 2 tablespoons milk

Instructions

Step 1

First, preheat the oven at 180 °c for 10 minutes. Also, line a baking tray with baking paper and grease the paper. Keep ready.

Combine the jaggery powder, vanilla or cardamom powder, yoghurt and ghee in a bowl. Whisk it for 10 minutes till creamy.

Then sieve all the flours, baking powder. Then slowly add to the creamy mixture and start binding it all along with adding milk inbetween. Make a soft dough and keep covered. Then take out small portions or bigger if you like, and place on the tray.

Press it a little and prick with a fork, and make all the cookies similarly. Bake them for 15 to 20 minutes.

Take out and let them cook on kitchen counter on a wire rack. Store in an airtight glass container and enjoy with your favourite cup of tea or coffee.

You can also add more millet flours and small nuts on top.
