Ragi Murukku with Onion & Garlic is a healthy recipe prepared with The Fresh Start Wellness Cafe's Finger Millet Flour (Ragi Flour), besan flour, rice flour, sesame seeds, butter, cumin powder, ajwain powder, pepper powder, chilli powder, turmeric powder, asafoetida, baking soda, pearl onions, garlic, green chilli, peanut oil, and other wholesome ingredients. Rich in calcium, dietary fibre, protein, iron, and essential nutrients, it provides a crunchy and satisfying snack while delivering the authentic goodness of ragi and aromatic spices in every bite.

Ingredients

  • 1 cup ragi flour
  • 1 table spoon besan flour
  • 1/2 cup Rice flour
  • 1 tbsp Sesame seeds
  • 1 tbsp Butter
  • 1/2 tsp cumin powder
  • 1/2 tsp caraway ajwan powder
  • 1/2 tsp pepper powder
  • 1/2 tsp Chili powder
  • 1/2 tsp turmeric powder
  • Pepper size asafoetida
  • 1/4 tsp Baking soda
  • As required Salt
  • as required peanut oil for frying

To make the paste:

  • 4 Pearl Onion
  • 4 Garlic cloves
  • 1 green chili

Instructions

Collect the necessary materials. Place near the cooking area.

In a bowl, soak hing in 1 tablespoon of hot water
Add some water to the paste ingredients and blend them in a mixer.

Melt the butter in a heavy-bottomed pan over medium-low heat. Add flour and fry lightly; Mix fried flour, cumin powder, ajwan, turmeric powder, pepper powder, chill, hing, salt, sesame seeds in a bowl. Mix together with fingers. Add the paste, mix adding water little by little. Add a small spoonful of hot oil; knead; make a soft dough
Rest the dough for 15-30 minutes.

Heat oil in a kadai on medium high flame. Apply oil inside the mould. Place the kneaded dough to ¾ of the mould and press into the hot oil. You may also make murukku on the spoon and then slide it into oil. You will see bubbles in the hot oil. After a couple of minutes, using a slotted spoon turn the murukkus. Let the bubbles subside; murukku will turn golden. And crisp. Place the fried murukkus on a paper towel. A paper towel will remove the oil from surface of the murukkus.

I could make 10 murukkus. Aromatic flavorful murukkus are ready taste. Transfer the murukkus to a serving plate. or bowl Enjoy with a hot cup of tea or coffee on a rainy day.
