Sweet and Savory Little Millet Dumplings are a nourishing millet-based version of traditional South Indian kozhukattai, prepared using little millet and authentic ingredients. Ingredients

  1. 1/2 cup Little millet/Samai rice flour
  2. 3 cups Milk
  3. 1/2 tsp Saffron
  4. 1/2 tsp Cardamom powder
  5. 1/4 cup Sugar
  6. Required Salt
  7. Seasoning for savory dumplings
  8. 1 table spoon sesame seed oil
  9. 1 tspchickpeas
  10. 1/2 Green chillies, finely chopped
  11. Pinch asafetida
  12. 10 Curry leaves
  13. 1 table spoon masala powder (mixture of cumin, carom/ajwan, coriander, pepper, red chili powders)

Instructions

Collect the necessary materials. Place near the cooking area

Sprinkle some water over the rice flour in a wet cloth, bundle it, and let it soak for 1 hour. Then steam it in the cooker without pressure for 5 minutes. Break the lumps if any. Use the flour to make dumplings.

Place half of the steamed flour in a plate and add ½ teaspoon of cardamom powder.
Add little salt and boiling water little by little and knead well. There should be no lumps. Well kneaded dough does not stick to hands. Make a ball of dough like a rope and cut it into small pieces and place it in the palm of your hand and make small balls with your fingers. Do not squeeze the balls. The balls should be smooth and soft.

To make the sweet dumplings: Bring 4 cups of water to a boil in a saucepan over medium heat. Then add 3 cups of milk and let it boil. Stir in cardamom powder, saffron, vanilla extract. Add the balls to the boiling milk. After 2 minutes reduce the flame. Swirl the sauce pan. Make sure the dumplings do not clump together. Let the milk boil. Add sugar. Let the milk boil till it condenses to 1 cup. Sweet milk dumplings are ready. Turn off the stove. Transfer them to a bowl.

Make small balls as you did before with the other half of steamed flour. Break the lumps if any Add little water, salt. Knead. Make a rope. Cut into small pieces to make small balls. Now you have to steam cook the balls

Add enough water in a steam cooker to generate steam. Keep the cooker on high flame, cover and bring to a boil. Steam cook the dumplings just as you cook idlies. Use an idli stand with plates., grease the wells with oil and place the balls. Assemble the idli plates on the stand, place it in a cooker (without pressure) cover the cooker and steam cook for 5 minutes. Take out and season.

Heat oil in a sauce pan over medium heat then add mustard seeds. After roasting, add cumin, turmeric, asafetida, curry leaves and green chilies for seasoning. Add steam cooked dumplings, little salt, spice powder and toss. Spicy dumplings are ready. Transfer them to a serving plate. Enjoy.
